- 1 1/2 lbs potatoes
- 1 lb green beans
- 2 tbsp olive oil
- 4 garlic cloves (minced)
- 1/2 tsp salt
- 1/3 tsp pepper
- 1/2 tbsp taco seasoning
- 1/2 tbsp oregano
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the potatoes, then mix them in a bowl with 1 1/2 tbsp olive oil, taco seasoning, oregano, salt, and pepper.
- Spread the potato cubes on a baking sheet and roast for 15 minutes.
- While the potatoes bake, prepare the green beans by combining them in the same bowl with the remaining olive oil, minced garlic, and salt.
- After 15 minutes, add the green beans to the baking sheet with the potatoes. Stir gently and return to the oven for an additional 20-30 minutes until both vegetables are tender.
