  • 3/4 teaspoon baking soda

  • 1/4 teaspoon baking powder

Instructions

  1. In a medium bowl, whisk together softened butter, light brown sugar, pumpkin puree, and vanilla until well blended.
  2. In another bowl, mix all-purpose flour, pumpkin pie spice, cream of tartar, baking soda, kosher salt, and baking powder until combined.
  3. Add dry ingredients to wet mixture and stir until fully mixed. Cover and refrigerate overnight.
  4. Preheat oven to 350°F and line cookie sheets with silicone mats. Combine granulated sugar and pumpkin pie spice in a small bowl for the coating.
  5. Scoop dough into balls about 2 tablespoons each, roll in spiced sugar, and place on the cookie sheets spaced apart.
  6. Bake for 11-12 minutes until puffed and set around the edges. Let cool before transferring to wire racks.
