Instructions
- Prepare the pesto by blending basil, garlic, parmesan, salt, and pepper in a food processor until smooth. Slowly add olive oil while blending until well combined.
- Using a spiralizer, create noodles from the zucchinis. If strands are too long, cut them into manageable pieces.
- In a large bowl, toss spiralized zucchini with the pesto until evenly coated. Add halved tomatoes and mix gently.
