- 2 (3-ounce) packages strawberry Vegan gelatin
- 2 (3-ounce) packages blueberry Vegan gelatin
- 24 oz strawberries, hulled and sliced
- 16 oz blueberries
- 1 (16-ounce) pound cake loaf
- 3 cups heavy cream
- 2 cups powdered sugar
- 1 (8-ounce) package cream cheese
Instructions
- Dissolve strawberry gelatin in boiling water; mix in ice water and fold in sliced strawberries.
- Repeat with blueberry gelatin using blueberries.
- Chill both mixtures until softly set (35-45 minutes).
- Whip heavy cream with powdered sugar until stiff peaks form.
- Beat cream cheese with vanilla extract until fluffy; fold in whipped cream.
- Layer half of pound cake slices in a dish; add half of the strawberry mixture followed by half of the cream cheese mixture.
- Repeat layers with remaining ingredients.
- Chill for at least 4 hours or overnight before serving.
