- 1 large cucumber (sliced)
- 8 oz fresh mozzarella (sliced)
- 1 cup fresh basil leaves
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Wash and slice the cucumber into thin rounds.
- Slice the mozzarella into thick rounds.
- In a large bowl or platter, layer cucumber slices and mozzarella rounds alternately, adding whole basil leaves in between.
- Drizzle with extra virgin olive oil and balsamic vinegar.
- Season with salt and freshly cracked pepper.
- Let the salad sit for 5 minutes before serving to enhance flavors.
