Instructions
- Rinse kale under cold water, pat dry, and tear into bite-sized pieces. Place in a large mixing bowl.
- Slice peaches into wedges and add to the bowl with fresh blueberries.
- Thinly slice red onion and mix it into the salad.
- In a small bowl, whisk together olive oil, balsamic vinegar, and honey or maple syrup until combined.
- Drizzle dressing over the salad mixture and gently toss to coat all ingredients evenly.
