Ingredients
- 3 lb bone-in lamb shoulder
- Salt & freshly ground black pepper
- 1/4 cup honey
- 3 tbsp soy sauce or Worcestershire sauce
- 4 cloves garlic (minced)
- 8 cloves whole garlic (peeled)
Instructions
- Preheat your oven to 325°F (163°C).
- Allow the lamb to reach room temperature for about 30 minutes. Season generously with salt and pepper.
- In a bowl, mix honey, soy sauce or Worcestershire sauce, and minced garlic until combined.
- Place the lamb in a roasting pan and brush half of the glaze over it. Add whole garlic cloves around the lamb.
- Roast in the oven for about 2 hours, basting occasionally with the remaining glaze until the internal temperature reaches 145°F (63°C).
- Let rest for 15 minutes before slicing and serving warm with your favorite sides.
