- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 medium sweet potatoes (about 2 lbs), peeled and cubed
- 2 tbsp olive oil
- 1 cup ketchup
- 1/4 cup apple cider vinegar
- 1/2 cup brown sugar
- 3 cloves fresh garlic, minced
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss sweet potato cubes with olive oil, salt, and pepper on the baking sheet. Spread them evenly.
- In a bowl, mix ketchup, apple cider vinegar, brown sugar, garlic, onion powder, salt, and pepper. Add chicken breasts to marinade and let sit for at least 15 minutes.
- Roast sweet potatoes for 25-30 minutes until golden brown.
- Heat a skillet over medium heat; cook marinated chicken for about 6-7 minutes per side until fully cooked.
- Assemble bowls by layering roasted sweet potatoes and sliced chicken. Drizzle with remaining sauce if desired.
