Instructions

  1. In a skillet over medium-high heat, add olive oil. Once hot, sear the beef strips with green bell peppers seasoned with garlic powder, salt, and pepper until browned (5-7 minutes).
  2. While the beef cooks, boil peeled and chopped potatoes in salted water until fork-tender. Drain and mash with butter and milk until smooth; season with salt and pepper.
  3. In another pot or steamer, steam sliced carrots and green beans until tender but still vibrant (about 4-5 minutes). Season lightly.
  4. Assemble your plate by placing mashed potatoes first, topping with the beef mixture on one side and steamed veggies on the other. Optionally garnish with black sesame seeds or nutritional yeast.
