- 1.5 lbs boneless skinless chicken breasts or thighs

- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 small red onion, sliced
- 1 cup cherry tomatoes
- ½ cup Kalamata olives
- Optional: crumbled feta cheese, fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, Greek seasoning, and red apple vinegar. Add the chicken and marinate for at least 10 minutes.
- On a baking sheet, arrange the sliced bell peppers, zucchini, red onion, cherry tomatoes, and Kalamata olives. Drizzle with olive oil and season with oregano, salt, and black pepper.
- Place the marinated chicken on top of the vegetables.
- Bake for about 20 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender.
- Serve topped with crumbled feta cheese and garnish with fresh parsley if desired.
