- 1 lb shrimp (peeled and deveined)
- 8 oz chicken sausage (sliced)
- 1 cup bell peppers (chopped)
- 1 medium yellow onion (chopped)

- 2 cups low-sodium chicken broth
Instructions
- Prep all ingredients by chopping the onion and bell peppers and mincing the garlic.
- In a large skillet over medium heat, add olive oil and sauté onions and bell peppers until soft (about 5 minutes). Add minced garlic and sliced chicken sausage; cook until browned.
- Stir in jasmine rice along with Cajun seasoning; toast the rice for an additional minute.
- Pour in low-sodium chicken broth; bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until rice is cooked through.
- Gently fold in shrimp; cover again and cook for an additional 5-7 minutes until shrimp are pink.
- Let sit for 5 minutes before fluffing with a fork. Adjust seasonings as desired before serving.
