Ingredients
- 4 salmon fillets
- 1.5 tbsp olive oil
- 1 tbsp olive oil (for filling)
- 4 cups spinach (fresh or frozen)
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1 pinch cayenne pepper
- 6 oz feta cheese (crumbled)
- 1/3 cup Parmesan cheese (grated)
- 1/4 cup roasted red peppers (chopped)
- 1/2 tsp garlic powder

- black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Place salmon fillets skin-side down and butterfly each fillet by slicing horizontally through the thickest part.
- In a mixing bowl, combine spinach, feta cheese, Parmesan cheese, roasted red peppers, Italian seasoning, paprika, cayenne pepper, garlic powder, salt, and black pepper.
- Add 1 tablespoon of olive oil to the mixture and stir until well combined.
- Generously fill each butterflied salmon fillet with the spinach-feta mixture.
- Drizzle 1.5 tablespoons of olive oil over the stuffed fillets and season with salt and black pepper.
- Place the stuffed salmon in a baking dish and bake in the preheated oven for about 10 minutes or until cooked through.
