  • 1/3 cup Parmesan cheese (grated)
  • 1/4 cup roasted red peppers (chopped)
  • 1/2 tsp garlic powder

  • black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place salmon fillets skin-side down and butterfly each fillet by slicing horizontally through the thickest part.
  3. In a mixing bowl, combine spinach, feta cheese, Parmesan cheese, roasted red peppers, Italian seasoning, paprika, cayenne pepper, garlic powder, salt, and black pepper.
  4. Add 1 tablespoon of olive oil to the mixture and stir until well combined.
  5. Generously fill each butterflied salmon fillet with the spinach-feta mixture.
  6. Drizzle 1.5 tablespoons of olive oil over the stuffed fillets and season with salt and black pepper.
  7. Place the stuffed salmon in a baking dish and bake in the preheated oven for about 10 minutes or until cooked through.
