- 2 lbs beef chuck
- 1 can (13.5 oz) full-fat coconut milk
- 1 cup beef broth
- 1 large onion
- 4 garlic cloves
- 1 tbsp fresh ginger
- 3 tbsp red curry paste
- 1 tbsp curry powder
- 1 tsp ground turmeric
- 1 tsp paprika
- 1/2 tsp chili flakes (optional)
- Salt and pepper to taste
- 1 tbsp brown sugar
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 2 tbsp fresh cilantro (for garnish)
Instructions
- Prepare all ingredients: finely chop the onion, mince the garlic, grate the ginger, and cube the beef.
- In a slow cooker, combine the cubed beef, coconut milk, beef broth, onion, garlic, ginger, red curry paste, curry powder, ground turmeric, paprika, chili flakes (if using), salt, pepper, brown sugar, soy sauce, and lime juice.
- Mix well and cover. Cook on low heat for 6-8 hours or until the beef is tender.
- Serve hot over cooked rice with warmed garlic naan on the side, garnished with fresh cilantro.
