  • 15 oz black beans
  • 15 oz corn
  • 1 cup salsa
  • 1 cup shredded Mexican cheese
  • Tortillas

Instructions

  1. Brown ground beef in a skillet over medium-high heat; drain excess fat.
  2. Sauté diced onion until soft, then add minced garlic for an additional minute.
  3. Stir in taco seasoning and diced tomatoes; remove from heat.
  4. Layer slow cooker: start with salsa, followed by tortilla strips, half of beef mixture, black beans, and corn. Repeat layers and top with remaining tortilla strips and salsa.
  5. Cook on low for 4-5 hours or high for 2-3 hours.
  6. In the last 15 minutes, add shredded cheese on top to melt.
