- 1 lb ground beef
- 1 small onion
- 2 cloves garlic
- 1 oz taco seasoning
- 14.5 oz diced tomatoes with green chilies
- 15 oz black beans
- 15 oz corn
- 1 cup salsa
- 1 cup shredded Mexican cheese
- Tortillas
Instructions
- Brown ground beef in a skillet over medium-high heat; drain excess fat.
- Sauté diced onion until soft, then add minced garlic for an additional minute.
- Stir in taco seasoning and diced tomatoes; remove from heat.
- Layer slow cooker: start with salsa, followed by tortilla strips, half of beef mixture, black beans, and corn. Repeat layers and top with remaining tortilla strips and salsa.
- Cook on low for 4-5 hours or high for 2-3 hours.
- In the last 15 minutes, add shredded cheese on top to melt.
- Garnish with cilantro and serve with sour cream, jalapeños, and avocado.
