Ingredients
Scale
- 1 C unsalted butter (softened)
- 1 C granulated sugar
- 1 C light brown sugar
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1/2 tsp salt
- 1 tsp baking powder
- 1 1/2 tsp cinnamon
- 2 1/2 C all purpose flour
- 1/4 C granulated sugar (for topping)
- 1 1/2 tsp cinnamon (for topping)
Instructions
- Preheat your oven to 350°F. Line a 9×13 inch baking pan with parchment paper, ensuring to lightly grease any exposed areas of the pan.
- In a large bowl or using a stand mixer, cream together the softened butter with both sugars until light and fluffy. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually mix in the dry ingredients—salt, baking powder, cinnamon, and flour—until smooth.
- Lightly grease your hands. Press the blondie mixture evenly into the prepared baking pan.
- In a small bowl, combine the additional granulated sugar with cinnamon. Sprinkle this mixture evenly over the top of your blondie batter.
- Place in preheated oven and bake for 25–30 minutes or until golden brown.
- Once baked, allow your blondies to cool completely before slicing them into squares. Store leftovers in an airtight container for up to several days.
