- 24 Special occasion sugar cookies (or shortbread cookies)
- 6 tablespoons unsalted butter, melted
- 8 oz cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup whipped topping
- 1 package instant vanilla pudding mix
- 1 ½ cups cold milk
- Crushed Special occasion cookies for topping
Instructions
- Crush the cookies into fine crumbs and mix with melted butter. Press firmly into an 8×8-inch dish and chill.
- Beat cream cheese, sugar, and vanilla until smooth; fold in whipped topping. Spread over crust.
- Whisk together pudding mix and milk until thickened; fold in crushed cookies and layer over cheesecake.
- Top with whipped topping and garnish as desired. Refrigerate for at least 4 hours before serving.
