Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with paper liners.
- In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, and pumpkin spice until combined.
- In another bowl, mix the pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth.
- Pour the wet mixture into the dry mixture and stir gently until just combined.
- In a small bowl, beat together the cream cheese, granulated sugar, flour, milk, and vanilla extract until creamy.
- Fill each muffin cup two-thirds full with batter and add a dollop of cream cheese filling on top.
- Bake for about 25 minutes or until a toothpick inserted in the center comes out clean.
- Allow cooling for five minutes in the pan before transferring to a wire rack.
