- 6 graham crackers
- 3 tablespoons melted butter

- 1 egg white (room temperature)
- 1 1/2 teaspoons vanilla extract
- 2 tablespoons all-purpose flour

- 3 ounces fresh strawberries (hulled)

Instructions
- Preheat oven to 350°F and line an 8×8 baking dish with parchment paper.
- In a food processor, combine graham crackers and melted butter until crumbly. Press into the baking dish to form the crust and bake for 5–7 minutes until lightly browned.
- In the cleaned food processor, mix cream cheese, Greek yogurt, sugar, vanilla extract, and salt until smooth. Add egg and egg white; blend until combined. Stir in flour until no lumps remain.
- Pour filling over the baked crust and bake for 25–30 minutes until set but slightly jiggly in the center.
- Prepare strawberry topping by blending hulled strawberries with sugar until smooth; mix in additional Greek yogurt and vanilla.
- Pour strawberry mixture over baked cheesecake and return to oven for another 15–20 minutes until just set.
- Cool completely on a wire rack before refrigerating for at least three hours or overnight before slicing into bars.
