Instructions

- In a mixing bowl, cream the very soft butter and powdered sugar until fluffy. Add cornstarch, vanilla extract, and mix well.
- Gradually incorporate all-purpose flour until a soft dough forms.
- Roll small balls of dough in sugar and place them on the baking sheet about two inches apart.
- Bake for 12–15 minutes until lightly golden around the edges. Cool on wire racks.
- For icing, combine diced strawberries with granulated sugar and let sit for 10 minutes. Mix in lemon juice and powdered sugar until smooth.
- Ice cooled cookies and allow them to set before serving.
