Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, mix diced strawberries, 2 tablespoons of cane sugar, and lemon juice; set aside.
- In a large mixing bowl, whisk melted coconut oil, cane sugar, and egg until combined. Gradually add flours, cinnamon, and salt; stir until mixed.
- Press half of this mixture into a greased 8×8 inch baking dish. Spread the strawberry filling over it.
- Combine remaining base mixture with rolled oats and sprinkle on top of the strawberries.
- Bake for about 45 minutes until golden brown.
- Allow cooling in the pan before cutting into squares.
