  • 1 tablespoon lemon juice
  • ¼ cup oat flour
  • ¼ cup all-purpose flour
  • ¼ cup coconut oil (melted)
  • ¼ cup cane sugar
  • ¼ teaspoon salt
  • 1 ½ cup rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix diced strawberries, 2 tablespoons of cane sugar, and lemon juice; set aside.
  3. In a large mixing bowl, whisk melted coconut oil, cane sugar, and egg until combined. Gradually add flours, cinnamon, and salt; stir until mixed.
  4. Press half of this mixture into a greased 8×8 inch baking dish. Spread the strawberry filling over it.
  5. Combine remaining base mixture with rolled oats and sprinkle on top of the strawberries.
  6. Bake for about 45 minutes until golden brown.
  7. Allow cooling in the pan before cutting into squares.
