Instructions
- Prepare the strawberry filling by cooking chopped strawberries, sugar, lemon juice, cornstarch, and vanilla extract in a saucepan over medium heat until thickened.
- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking pan with parchment paper.
- Combine oats, flour, brown sugar, baking powder, salt, and cinnamon in a mixing bowl. Cut in cold butter until crumbly.
- Press two-thirds of the mixture into the prepared pan as a base. Spread cooled strawberry filling on top and sprinkle remaining crumble over it.
- Bake for 35-40 minutes until golden brown and bubbly at the edges. Cool completely before slicing.
