Instructions
- Preheat oven to 350°F (180°C).
- Roll out puff pastry into a rectangle and place it on a parchment-lined baking sheet.
- Create an egg wash by whisking the egg yolk with water; brush over the pastry edges.
- Puncture holes in the dough with a fork and add weights (like beans) in the center.
- Bake for about 20 minutes until golden brown; cool completely on a wire rack.
- In a bowl, whisk together cream cheese, lime juice, and turbinado sugar until smooth.
- Spread the cream cheese mixture over the cooled crust.
- Arrange sliced peaches on top followed by an assortment of berries.
- Garnish with mint leaves before serving.
