Instructions
- In a medium bowl, whisk together the dressing: balsamic vinegar, olive oil, minced garlic, Dijon mustard, salt, pepper, and optional sweetener.
- In a large bowl, add the organic spinach and drizzle with desired amount of dressing; toss gently to combine.
- Top the spinach with peach slices, diced avocado, red onion, goat cheese (or feta), and toasted almonds.
- Gently toss everything together again before serving immediately.
