Instructions
- In a non-stick skillet, heat olive oil or butter over medium-low heat.
- Crack the egg into the skillet and cook until the whites are set but the yolk remains runny. Season with salt and pepper.
- Meanwhile, steam broccoli, cauliflower, and carrots in a steamer basket for about 4-5 minutes until tender-crisp.
- On a serving plate, arrange the sunny-side egg with avocado slices, halved cherry tomatoes, and steamed veggies. Add extra black pepper if desired.
