Ingredients
- 2 large sweet potatoes (1.5 lbs), peeled and thinly sliced
- 4 cups kale, stems removed and chopped
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 cup Gruyère cheese, grated
- 1/4 teaspoon ground nutmeg
- Salt and black pepper to taste
- 1 tablespoon olive oil for greasing
Instructions
- Preheat the oven to 375°F (190°C).
- Peel and thinly slice sweet potatoes; set aside.
- Sauté chopped kale in a skillet with water or olive oil for about 5-7 minutes until wilted.
- Grease a 9×13 inch baking dish with olive oil.
- Layer sweet potato slices at the bottom of the dish, followed by sautéed kale, cream mixture, and Gruyère cheese. Repeat layers until ingredients are used up.
- Cover with aluminum foil and bake for 30 minutes.
- Remove foil and bake for an additional 20-25 minutes until golden brown on top.
- Let cool for 10 minutes before serving.
