- 2 cups sliced fresh peaches
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup cooked shredded chicken
- 1 tablespoon olive oil
- 4 large flour tortillas

Instructions
- Wash and slice the peaches; shred the cooked chicken if not already done. Mix peaches and chicken in a bowl, adding cinnamon and honey/agave syrup if desired.
- Heat olive oil in a non-stick skillet over medium heat.
- Assemble each quesadilla by placing cheese, the peach-chicken mixture, more cheese on one half of a tortilla, then fold it.
- Cook the quesadilla for about 3–4 minutes on each side until golden brown and crispy. Repeat with remaining tortillas.
- Slice into wedges and serve warm.
