- 4 cod fillets (6 oz each)
- 1 cup all-purpose flour
- 1/4 cup fresh lemon juice
- 2 tbsp capers, rinsed
- 1 cup low-sodium chicken broth
- 2 tbsp olive oil
- 2 tbsp fresh parsley, chopped
Instructions
- Rinse cod fillets under cold water and pat dry. Season both sides with salt and pepper.
- Dredge the fillets in flour, shaking off excess.
- Heat olive oil in a skillet over medium-high heat. Add the cod fillets and cook for 3 minutes on each side until golden brown. Remove from pan.
- In the same skillet, combine chicken broth, lemon juice, and capers. Simmer for two minutes.
- Return cod to the skillet, spooning sauce over it. Simmer for another minute until heated through.
- Serve drizzled with sauce and garnished with parsley.
