- 10 oz colored miniature vegan marshmallows
- 1 cup shredded sweetened coconut
- ½ cup chopped nuts (optional)
Instructions
- In a large mixing bowl, combine the vanilla instant pudding mix and crushed pineapple until well blended.
- Gently fold in the Cool Whip, vegan marshmallows, shredded coconut, and optional chopped nuts until evenly mixed.
- Cover the bowl with plastic wrap or a lid and refrigerate until ready to serve.
- Just before serving, garnish with additional shredded coconut if desired.
