- 1 ½ – 2 cups cherry tomatoes
- 2–3 ripe peaches
- 1 cup fresh cherries
- 8 ounces burrata cheese
- ¼ cup toasted pumpkin seeds
- Fresh herbs: basil, oregano, dill, thyme
- Vinaigrette: olive oil, balsamic vinegar, honey, shallot, garlic, lemon zest
Instructions
- Make the Vinaigrette: In a glass jar, combine olive oil, balsamic vinegar, honey, chopped shallot, grated garlic, and lemon zest. Whisk until smooth.
- Assemble the Salad: In a large mixing bowl, combine halved cherry tomatoes, peach wedges, and fresh cherries. Add one-third of the vinaigrette and gently toss to combine. Let sit for 15 minutes.
- Serve: Just before serving, break burrata over the salad and drizzle with remaining vinaigrette. Top with toasted pumpkin seeds and additional herbs.
