Instructions
- In a large pot, heat olive oil over medium heat. Sauté the diced onion until translucent, then add minced garlic and cook until fragrant.
- Stir in chopped tomatoes and vegetable broth; season with salt and pepper. Simmer for about 20 minutes.
- Blend the soup until smooth using an immersion blender. Stir in heavy cream.
- In a mixing bowl, combine flour, baking powder, cheese, salt, and optional herbs. Gradually mix in water to form a soft dough.
- Drop spoonfuls of the dumpling mixture into the simmering soup. Cover and steam for 10-15 minutes until fluffy.
- Serve hot, garnished with fresh herbs or extra cheese if desired.
