Ingredients
- 12 ounces fusilli pasta
- 1 pound chicken sausage (sliced)
- 1/2 pound large shrimp (peeled and deveined)
- 1 red bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1 onion (sliced)
- 3 cloves garlic (minced)
- 15 ounces Alfredo sauce
- 1 teaspoon Cajun seasoning
- 1/2 cup grated Parmesan cheese
- Optional: Minced parsley for garnish
Instructions
- Cook the fusilli pasta in a large pot of salted boiling water according to package instructions. Drain, reserving 1/2 cup of pasta water.
- In a large skillet, heat olive oil over medium heat and sear the shrimp for about one minute on each side. Remove from skillet and set aside.
- In the same skillet, add sliced chicken sausage and cook until browned on both sides, about 6 minutes total. Add sliced bell peppers and onion; sauté for 5 minutes until softened, then add minced garlic for the last minute.
- Stir in the Alfredo sauce, reserved pasta water, Cajun seasoning, and bring to a simmer for about 3-4 minutes.
- Return shrimp to the skillet along with cooked pasta; mix until well combined. Adjust sauce consistency with more reserved pasta water if needed.
- Serve garnished with chopped parsley and additional Parmesan cheese.
