- 1 mini watermelon (approximately 4 cups, cubed)
- 2 Persian cucumbers (approximately 1 cup, sliced)
- 3 ounces feta cheese (cubed)
- 1 tablespoon chopped mint
- 1 tablespoon chopped basil
- Juice of 1 lime
- Olive oil to taste
- Kosher salt and freshly ground black pepper to taste
- 2 tablespoons fresh parsley (finely chopped) for garnish
Instructions
- Wash all produce thoroughly. Cube the mini watermelon after removing the rind. Slice the cucumbers into thin rounds.
- In a large serving bowl, combine cubed watermelon, sliced cucumbers, feta cheese, mint, and basil.
- Squeeze lime juice over the mixture. Drizzle with olive oil and season with salt and pepper to taste.
- Gently stir to combine. Adjust seasoning if needed before serving immediately or chilled.
