- 2 chicken breasts
- 1 ounce taco seasoning
- 1 ounce ranch seasoning mix
- 15 ounces canned black beans
- 15 ounces canned corn
- 10 ounces canned Rotel tomatoes with green chiles
- 8 ounces cream cheese
Instructions
- Place trimmed chicken breasts at the bottom of the Crock Pot. Top with black beans, corn, and Rotel tomatoes (all undrained). Sprinkle taco and ranch seasoning over the top and add cream cheese without mixing.
- Cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours until chicken is cooked through.
- Shred the chicken using two forks and stir to incorporate melted cream cheese into the chili.
- Serve hot, garnished with your choice of tortilla strips, avocado slices, lime juice, and cilantro.
