- 4 cups raspberries
- 1/2 cup water
- 3/4 cup granulated sugar (divided)
- 1 tablespoon lemon juice
- 1 1/2 cups heavy cream
- 16 ounces mascarpone cheese
- 3/4 cup raspberry syrup
- 1 teaspoon vanilla extract
- 1 package Savoiardi ladyfingers
- 1 ounce grated white chocolate
Instructions
- Make the raspberry syrup by simmering raspberries, water, sugar, and lemon juice until thickened. Strain and chill.
- Whip heavy cream to stiff peaks. In another bowl, mix mascarpone cheese, sugar, raspberry syrup, and vanilla until smooth. Fold in whipped cream.
- Dip ladyfingers in cooled raspberry syrup and layer them in an 8-inch dish. Spread half the mascarpone mixture, sprinkle with grated chocolate, then repeat layers.
- Chill for at least 6 hours or overnight before serving.
