- 4 cups sliced celery
- 1/4 cup toasted nuts (almonds, walnuts, or pistachios)
- 1/4 cup crumbled cheese (optional: feta or goat cheese)
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice or white apple vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- Wash the celery thoroughly and slice it thinly on the bias.
- In a dry skillet over medium heat, toast your choice of nuts until golden brown.
- In a mixing bowl, combine olive oil, lemon juice or vinegar, Dijon mustard, honey, salt, and pepper; whisk until blended.
- In a large bowl, add sliced celery and pour the vinaigrette over it; toss well to coat. Add in toasted nuts and crumbled cheese if desired.
