Ingredients
- 12 Jumbo shrimp (about 1/2 pound, shells and tails removed, deveined)
- 4 Flour tortillas (10-inch)
- 2 Avocados (peeled and smashed)
- 1 Cup shredded Muenster cheese
- 1/2 Cup roasted green chile peppers (chopped)
- 2 teaspoons Southwest spice blend
- 4 tablespoons butter
- 1 tablespoon neutral oil (canola or vegetable oil)
Instructions
- In a fry pan over medium-high heat, add oil and cook the seasoned shrimp for about four minutes until pink and opaque. Remove from heat.
- Butter one side of each tortilla and spread smashed avocado on the unbuttered side.
- Assemble by adding cheese, cooked shrimp, and green chiles on half of each tortilla.
- Heat a non-stick skillet over medium heat and cook each filled tortilla until golden brown on both sides and the cheese is melted.
- Cut into wedges and serve hot with your favorite dips.
