  • 4 tablespoons butter
  • 1 tablespoon neutral oil (canola or vegetable oil)

Instructions

  1. In a fry pan over medium-high heat, add oil and cook the seasoned shrimp for about four minutes until pink and opaque. Remove from heat.
  2. Butter one side of each tortilla and spread smashed avocado on the unbuttered side.
  3. Assemble by adding cheese, cooked shrimp, and green chiles on half of each tortilla.
  4. Heat a non-stick skillet over medium heat and cook each filled tortilla until golden brown on both sides and the cheese is melted.
