- 4 whole chicken leg quarters
- 3 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon chili flakes
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1 tablespoon dark soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon fresh lemon juice
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with aluminum foil.
- In a mixing bowl, whisk together all marinade ingredients except for the chicken.
- Score each chicken leg quarter with three cuts down to the bone on the thigh and drumstick.
- Arrange the scored chicken on the baking sheet without overlapping.
- Spoon half of the marinade over the chicken, massaging it into the skin and cuts.
- Bake for 30 minutes, remove from oven, add remaining marinade, then bake for an additional 15 minutes.
- Let rest for a few minutes before serving.
