- 2 beef tenderloins (over 1 pound each)
- Juice and zest of 2 limes
- 1/2 cup canola oil
- 1/3 cup soy sauce
- 3 tablespoons rice vinegar
- 1/3 cup honey
- 6 cloves garlic, minced
- 1/4 cup canola oil (for honey garlic paste)
- 1 tablespoon dried oregano
- 2 tablespoons brown sugar
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- 1/4 cup extra-virgin olive oil (for green sauce)
- 1 tablespoon red apple vinegar
- 1 teaspoon lime zest (for green sauce)
- 1/3 cup parsley, finely chopped
- 1/3 cup green onions, finely chopped
- 4 cloves garlic, minced (for green sauce)
- 1/4 teaspoon crushed red pepper flakes
- Kosher salt
- Freshly ground black pepper
Instructions
- In a mixing bowl, combine lime juice, lime zest, canola oil, soy sauce, rice vinegar, and honey. Marinate the beef tenderloins for at least 30 minutes.
- Prepare the honey garlic paste by mixing canola oil, minced garlic, lime zest and juice, dried oregano, brown sugar, smoked paprika, onion powder, and cayenne pepper in another bowl.
- Preheat your grill to medium-high heat.
- Remove the tenderloins from the marinade and pat dry; season with salt and pepper.
- Grill each side for about 5-6 minutes for medium-rare doneness while basting with the honey garlic paste.
- Let the meat rest for 10 minutes before slicing and serving with the bright green sauce made from olive oil, apple cider vinegar, lime juice, parsley, green onions, garlic, and crushed red pepper flakes.
