Instructions
- In a medium bowl, mix yeast into warm water and set aside.
- In a stand mixer bowl, combine cake mix, salt, and 4 cups flour. Add yeast mixture and stir until well combined.
- Gradually add the remaining flour until dough is soft but slightly sticky. Cover and let rise in a warm place for about 60 minutes or until doubled.
- Turn dough onto a floured surface, knead briefly, then roll into a rectangle. Spread softened butter evenly over the dough.
- Mix sugars and lemon zest in a bowl; sprinkle over buttered dough.
- Cut dough into smaller rectangles, roll each into logs, and slice into pieces about 1 to 1½ inches wide.
- Place rolls in greased pans; cover and let rise again for about 40 minutes.
- Preheat oven to 350°F and bake for approximately 20–25 minutes until golden brown.
- For frosting: Beat together cream cheese and butter until creamy; add vanilla and lemon juice, then gradually mix in powdered sugar until smooth.
