Instructions
- Prepare the crust: In a mixing bowl, combine flour and salt. Add chilled butter cubes, blending until crumbly. Gradually mix in ice cold water until dough holds together.
- Roll out the dough on a floured surface into a circle about 12 inches in diameter and transfer it to a pie dish.
- Make the filling: Mix cornstarch with water until smooth. Combine cherries, sugar, lemon juice, and cornstarch mixture in a saucepan over medium heat until thickened.
- Assemble the pie: Pour cherry filling into the crust, spreading evenly. Optionally top with another layer of dough or create a lattice.
- Bake: Preheat oven to 425°F (220°C) and bake for about 70 minutes or until golden brown.
