Instructions
- Preheat your oven to 350°F (175°C) and line an 8-by-8-inch baking pan with aluminum foil, lightly spraying it with cooking spray.
- In a large microwave-safe bowl, melt the butter in the microwave for about one minute. Allow it to cool slightly before adding the egg, brown sugar, vanilla extract, and cinnamon. Whisk until smooth.
- Gradually fold in the flour and salt until just combined; avoid overmixing.
- Pour the batter into the prepared pan and smooth out the top. Bake for about 20 to 24 minutes until set in the center. Allow cooling on a wire rack for at least 90 minutes.
- For the frosting, beat together softened cream cheese, softened butter, confectioners’ sugar, vanilla extract, and salt until light and fluffy.
- Once cooled, spread frosting evenly over blondies and sprinkle with additional cinnamon if desired.
