- 1 roma tomato, chopped
- 3 tablespoons olive oil
- Salt and pepper to taste
- ¼ cup fresh parsley, chopped
- Optional: crumbled feta cheese and lemon juice for garnish
Instructions
- Prepare the black beans by draining and rinsing them under cold water.
- Chop the cucumber into bite-sized pieces and dice the roma tomato.
- In a large mixing bowl, combine the black beans with cucumber, tomato, and parsley.
- Drizzle olive oil over the mixture; add lemon juice if desired. Season with salt and pepper.
- Toss gently until well combined; serve immediately or chill before serving.
