- 4 boneless chicken breasts (or 8 thighs)
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1/4 tsp cayenne pepper (optional)
Instructions
- Prepare the Brine: In a mixing bowl, dissolve kosher salt and brown sugar in warm water. Add smashed garlic for flavor.
- Brine the Chicken: Submerge chicken in the brine for about 30 minutes to enhance moisture.
- Season the Chicken: Pat chicken dry and rub with a mixture of salt, black pepper, garlic powder, paprika, oregano, and optional cayenne.
- Preheat the Grill: Heat grill to medium-high and oil grates well.
- Grill the Chicken: Cook chicken on one side for about 7 minutes; flip and cook for an additional 6 minutes until it reaches an internal temperature of 165°F.
- Rest Before Serving: Remove from grill and let rest covered loosely with foil for about 5 minutes before slicing.
