Instructions
- Preheat your oven to 350°F (175°C) and prepare your loaf pan with butter and parchment paper.
- In a small bowl, mix diced strawberries with granulated sugar and let sit for 10-15 minutes. Drain excess juice and coat with flour.
- In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, combine sugars, melted butter, oil, eggs, buttermilk, and vanilla extract until smooth.
- Fold wet ingredients into dry ingredients until just combined; gently incorporate the floured strawberries.
- Pour batter into the prepared pan and bake for about 55-65 minutes or until a skewer comes out clean.
- Allow cooling before drizzling with a glaze made from powdered sugar and milk.
