  • 1 Tbsp extra virgin olive oil
  • 1 1/2 cups cucumber (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup red onion (thinly sliced)
  • 1/2 cup Kalamata olives (sliced lengthwise)
  • 1/2 cup feta cheese (fat-free, crumbled)
  • 1/2 Tbsp olive oil (extra virgin)
  • 1 Tbsp lemon juice (fresh)
  • 1/2 Tbsp balsamic vinegar

  • 2 cups cooked brown rice
  • 4 cups romaine lettuce (chopped)

Instructions

  1. Preheat your oven to 400°F or air fryer to 375°F. In a mixing bowl, combine ground chicken, breadcrumbs, parsley, onion, garlic, oregano, cumin, salt, and pepper. Form into 1-inch meatballs.
  2. Cook meatballs: Bake for 20 minutes or air fry for 15-20 minutes until golden brown.
  3. For tzatziki: Mix Greek yogurt, grated cucumber (drained), garlic, lemon juice, dill, olive oil, salt, and pepper in a bowl until smooth.
  4. Prepare salad by combining chopped cucumber, cherry tomatoes, red onion, olives, feta cheese with olive oil and lemon juice in another bowl.
