Ingredients
- 20 oz fresh cheese tortellini
- 1 1/2 cups cherry tomatoes (halved)
- 1 1/2 cups cucumbers (chopped)
- 1 cup canned artichoke hearts (chopped)
- 1 cup olives (sliced)
- 1/2 red onion (sliced)
- 1 cup crumbled Feta cheese
- 1/2 cup olive oil
- 1/3 cup red apple vinegar
- 3–4 tablespoons white sugar
- 2 teaspoons Dijon mustard
- 3 teaspoons minced garlic
- 2 teaspoons dried oregano
- 2 teaspoons dried basil
- 1 teaspoon salt
- Juice of 1 lemon
- Pinch of red pepper (optional)
Instructions
- Cook the tortellini according to package directions in a large pot of boiling water until al dente. Drain and cool.
- In a small bowl, whisk together olive oil, red apple vinegar, sugar, Dijon mustard, minced garlic, oregano, basil, salt, lemon juice, and optional red pepper until smooth.
- In a large mixing bowl, combine the cooled tortellini with cherry tomatoes, cucumbers, artichokes, olives, red onion, and half of the feta cheese. Pour the dressing over the mixture and stir gently.
- Chill for at least 2 hours before serving. Top with remaining feta cheese and chopped dill before enjoying.
