  • 1 1/2 cups cucumbers (chopped)
  • 1 cup canned artichoke hearts (chopped)
  • 1 cup olives (sliced)
  • 1/2 red onion (sliced)
  • 1 cup crumbled Feta cheese
  • 1/2 cup olive oil
  • 1/3 cup red apple vinegar
  • 34 tablespoons white sugar
  • 2 teaspoons Dijon mustard
  • 3 teaspoons minced garlic
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon salt
  • Juice of 1 lemon
  • Pinch of red pepper (optional)

Instructions

  1. Cook the tortellini according to package directions in a large pot of boiling water until al dente. Drain and cool.
  2. In a small bowl, whisk together olive oil, red apple vinegar, sugar, Dijon mustard, minced garlic, oregano, basil, salt, lemon juice, and optional red pepper until smooth.
  3. In a large mixing bowl, combine the cooled tortellini with cherry tomatoes, cucumbers, artichokes, olives, red onion, and half of the feta cheese. Pour the dressing over the mixture and stir gently.
  4. Chill for at least 2 hours before serving. Top with remaining feta cheese and chopped dill before enjoying.
