- 1 cup chopped and peeled fresh peaches (or frozen)
- 1/2 cup ketchup
- 2 tablespoons fresh lemon juice
- 2 cloves garlic (minced)
- 1 1/2 teaspoons adobo sauce from canned chipotle chiles in adobo
- Salt and pepper to taste
- 4 boneless skinless chicken breasts
Instructions
- In a small saucepan, combine the peaches, ketchup, lemon juice, garlic, and adobo sauce. Season with salt and pepper, then bring to a boil. Reduce heat and simmer until peaches are soft, about 10 minutes.
- Let the mixture cool slightly before blending until smooth. Adjust seasoning as needed.
- Marinate the chicken by mixing half of the peach BBQ sauce in a bowl with the chicken breasts. Let marinate at room temperature for 20 minutes or refrigerate for up to 8 hours.
- Preheat the grill to medium-high heat. Grill the chicken for 4-5 minutes on each side until browned and almost cooked through. Brush with reserved peach BBQ sauce during the last few minutes of cooking until glazed.
- Slice the chicken against the grain and serve with remaining peach BBQ sauce.
