- 21 g active dry yeast
- 50 g sugar
- 550 g Manitoba flour (or bread flour)
- 2 eggs
- 1 egg yolk
- 5 g salt
- 70 g unsalted butter
- 750 ml vegetable oil (for frying)
- 350 g chocolate spread (or filling of choice)
- 360 g apricot jam (or filling of choice)
Instructions
- Prepare the yeast mixture by combining lukewarm milk, water, yeast, and sugar. Let it sit until foamy.
- In a stand mixer, combine flour, eggs, salt, and the yeast mixture. Knead until elastic and smooth, then incorporate butter.
- Allow the dough to rise covered for about 1 – 1½ hours.
- Roll out the dough and cut into heart shapes; let rise again until tripled in size.
- Heat oil and fry doughnuts until golden brown on both sides.
- Dust with sugar and fill with your favorite filling.
