- 8 oz almond paste
- ¼ cup butter or dairy-free spread
- 1 large egg yolk or egg replacer
- 1 large egg white or aquafaba
- 1 teaspoon almond extract
- Apricot preserves
Instructions
- In a food processor, combine flour and confectioners' sugar.
- Add cold butter and pulse until mixture resembles coarse crumbs.
- Mix in egg yolk and enough cold water until dough comes together; refrigerate for at least 30 minutes.
- Preheat oven to 350°F (175°C).
- Roll out dough on a floured surface, cut circles, and fit into tartlet pans.
- Blend almond paste, softened butter, egg white, and almond extract; spoon into crusts.
- Bake for about 25 minutes until golden brown; cool before serving.
