Instructions
- In a mixing bowl, combine diced tomatoes, basil, garlic, shallot, balsamic vinegar, olive oil, salt, and pepper. Toss gently and set aside.
- Preheat your oven to 400°F (200°C). Arrange baguette slices on a baking sheet and brush both sides with olive oil.
- Bake for 5-7 minutes until golden brown and crispy.
- Top each toasted bread slice with a generous spoonful of the tomato mixture and add goat cheese if desired.
- Drizzle with balsamic glaze before serving.
